Chili-Lime wings

  • 24 Chicken Wings, at room temperature

For the Sauce:

  • 3 Shallots, peeled
  • 2 cloves garlic, peeled
  • 20 kaffir lime leaves
  • ½ Cup Canola Oil
  • ½ Cup Honey
  • ½ Cup Sriracha hot sauce
  • 1 tbsp chili powder
  • ½ Cup chicken bouillon powder
  • ¼ Cup rice wine vinegar
  • ¼ Cup Lime juice


Preheat oven to 350 degrees.  On a cookie sheet, place the wings and partially cook in the oven for about 10 minutes, then set aside.

In a food processor, puree all remaining ingredients, then put in a LARGE ziplock baggie, along with the wings, seal the bag (you can use a bowl too to toss the wings with the sauce), and toss until wings are totally coated.  Finish on the grill for about 5 minutes, for a nice grilled/smoky flavor.  You can also finish them in a wok, or sauté pan (same 5 minutes).
