Citrus Salad

Ingredients

  • 2 ruby red grapefruits
  • 3 navel oranges
  • 6 clementines/ “cuties”
  • 1 pomegranate, seeds only

Preparation

For all of the citrus fruit, you are going to “supreme” them, meaning cut off the top and bottom as close to the flesh as possible, then peel the skin and pith as close to the flesh as possible, you don’t want any of the pith because its bitter. Now, carefully, with a sharp knife (over the serving bowl, to catch any juice) slice into the segments along each side, to remove them from the core, leaving the membrane that separates them, and put the segments into a serving bowl.  Squeeze any remaining juice out of the core into a serving bowl and discard. Remove the seeds from the pomegranate and add them to the bowl with the citrus fruit.  Toss and serve.
