Cranberry Orange Muffins

6oz unsalted butter, room temp
1/2 c sugar
3 eggs
8oz sour cream
2 oz juice from a fresh orange
Zest of 1 orange
3 c flour
1 Tbsp Baking Powder
1/2 Tsp, Baking Soda
1/4 Tsp salt
6oz dried cranberries

  • Preheat oven to 375
  • Zest orange into a bowl
  • Juice orange into a separate bowl
  • Combine flour, baking soda,baking powder, salt and mix well in a 3rd bowl
  • Place cranberries in very hot water, set aside
  • In a stand mixer, combine orange zest, sugar and butter. ¬†beat until light and fluffy
  • Add eggs, 1 at a time, scraping bowl as necessary, until well incorporated
  • Add about 1/2 the dry ingredients to the mixer and mix on low…add 1/2 of your O.J and 1/2 sour cream while mixing
  • Do not over mix just slightly incorporate
  • Scrape down bowl and add the rest of your dry ingredients
  • While mixing on low add the remaining O.J. and sour cream.
  • Mix to combine ingredients…add drained cranberries and combine.
  • Scrape bowl and scoop muffins
  • Sprinkle raw sugar on top if desired (large grain) before baking
  • Bake at 375 for 20-30 minutes or until toothpick inserted in center comes out clean
