Herb Lemon Marinade

Time: 15 minutes

Yield: Enough to marinate about 4 chicken breasts/fish filets

Level: Easy


  • Zest and Juice of 2 lemons
  • 1/4 Cup Extra Virgin Olive Oil
  • 2 Tsp Salt/Pepper
  • 1/4 Cup Red Wine Vinegar
  • 1 small handful chopped flat leaf parsley
  • 2 sprigs fresh Rosemary, chopped and stems removed
  • 3 sprigs fresh Thyme, chopped and stems removed
  • 3 cloves garlic, peeled and chopped
  • 2 sprigs fresh Oregano, chopped and stems removed


  • Combine all ingredients in a bowl, and taste to make sure it fits your palette. ¬†Adjust accordingly
  • Place your protein (this is best on chicken or seafood) in a large ziplock bag.
  • Pour marinade in, and seal tightly. ¬†Refrigerate until ready to cook. ¬†2-24 hours
