Key Lime Pie

  • 1/3 box, Graham Crackers
  • 6 Tbsp Butter, melted
  • 1/3 Cup granulated Sugar
  • 1 14oz can, Condensed Milk
  • 4 Egg Yolks
  • 2/3 Cup Key lime juice and zest
  • 1 Cup Heavy Cream
  • ¼ cup powdered sugar
  • 2 tsp vanilla extract



-Preheat oven to 350F.

-Crust:  Put graham crackers in food process to break down into crumbs, then add the granulated sugar and melted butter to combine.  Pour the crust mixture into a 9” pie pan and flatten with your hands, working the crust up the side of the pan as well.  Bake in the oven about 10 minutes to ‘set’ the crust.  Remove from the oven and set aside to cool.

-Filling:  In a large mixing bowl, with a stand mixer (w/whip attachment), or with an electric mixer, whip the yolks on high setting for a few minutes to get them fluffy.  Then add the condensed milk while mixing.  Next lower the speed and add the lime juice and zest, and mix until just combined, don’t over mix.  Pour mixture into the pie crust and bake for about 10 minutes, or until the custard has set.  Let cool, then refrigerate for at least 20 minutes before serving

Whipped Cream:  In a large mixing bowl, pour in the milk, vanilla and powdered sugar and mix until stiff peaks form (you may want to start on slow speed so you don’t end up wearing the powdered sugar)!
