Chocolate Oatmeal Quinoa Cookies

Ingredients

  • 1 Cup whole wheat flour
  • 1/2 Cup ground flax seed meal
  • 3/4 Cup old fashioned rolled oats
  • 1/2 tsp sea salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 Cup coconut oil, melted
  • 1/4 Cup fat free greek yogurt
  • 2/3 Cup packed dark brown sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 Cup toasted, then cooked and cooled quinoa
  • (add 1/4 tsp coconut extract and 1/4 tsp almond extract to the cooking water for an infused flavor)
  • 1/2 Cup nestle mini chocolate chips
  • 1/4 Cup shredded coconut

Preparation

-Preheat oven to 375F.

-In a medium bowl, with a fork, mix together the dry ingredients:  flour, oats, flax seed, salt, baking powder, and baking soda. Add mini chocolate chips and coconut and incorporate.  Set aside

-Next mix wet ingredients as follows:  mix melted coconut oil, and yogurt until combined, then stir in brown sugar and mix until well combined.  Add eggs and vanilla and mix thoroughly.

-Once quinoa is well cooled, mix in until incorporated.

-Add dry ingredients and stir until just incorporated (thick and gooey)

-Using a tablespoon or medium cookie scoop, drop scoops about 2 inches apart onto cookie/baking sheets.

-Bake about 10-12 minutes, or until set and lightly browned all over.

-Let cool for a few minutes then remove to a cooling rack.

-Enjoy!
