4oz fresh Basil
1 oz Parmigiano Reggiano Cheese, grated
1/2 oz pine nuts, toasted
1 small clove, peeled
Good quality extra virgin olive oil, to taste
Juice/zest from 1/2 a lemon
Salt/Pepper to taste
-In a food processor, put the following: basil, pine nuts, garlic, lemon, salt and pepper. pulse, until combined
-Turn on and drizzle in oil until you achieve the desired consistency.
-move the mixture to a large bowl and add the parmigiano reggiano cheese. Mix by hand until thoroughly combined.
-add salt and pepper to taste
